These hot cocoa cookies are the textbook definition of a cozy Christmas recipe! They're made with actual hot cocoa mix and those yummy, crunchy marshmallows straight out of a Swiss Miss package (well, I got mine on Amazon*, but you get the picture). These cookies are perfectly chewy but still firm enough to hold together well, and the chocolate chips sprinkled in give it an extra chocolaty flavor without being too overpowering. I truly can’t recommend these cookies enough, especially around the holidays. - Dark brown sugar

Customize This Recipe!
There are a few different ways you can customize this recipe:
- Use regular mini marshmallows. If you can't get the dehydrated ones, normal mini marshmallows will work too - they'll just be much gooier whereas the dehydrated marshmallows will stay firm with a bit of crunch.
- Add your favorite chocolate. You can include whatever kind of chocolate chips or chunks you want here - mint chocolate would taste just like a peppermint hot chocolate for even more festive flavor!

Hot Cocoa Cookies
Ingredients
- 16 tablespoon butter room temp
- ⅔ cup granulated sugar
- 1 cup dark brown sugar
- 2 eggs
- 1 ½ teaspoon vanilla
- 3 cups flour
- 4 packages hot cocoa mix or ⅔ cup cocoa powder
- 1 teaspoon salt
- 1 teaspoon baking soda
- 2 teaspoon baking powder
- 1 cup chocolate chips
- 1 cup mini marshmallows dehydrated
Instructions
- In a standard mixer, cream butter and sugars until smooth.
- Add in eggs and vanilla extract until fully combined.
- In a separate bowl, mix together flour, baking soda, baking powder, and salt.
- Add your dry ingredients to your wet ingredients in small amounts until just combined.
- Fold in your chocolate chips and marshmallows evenly, then chill your dough for at least 30 minutes.
- Preheat oven to 350ºF and prepare a baking sheet with parchment paper.
- Using a cookie scoop for consistency, drop cookies about 2 inches apart on your sheet. you can flatten the tops slightly for a rounder, slightly thinner cookie.
- Bake for about 9 minutes or until edges are lightly browned, and let cool slightly before serving.
