Hot Cocoa Cookies
These hot cocoa cookies are truly just like hot cocoa in cookie form! Made with hot chocolate mix, chocolate chips, and mini marshmallows, they’re the perfect sweet snack to enjoy around the holidays, especially with a warm drink by the fireplace.

- 16 tablespoon butter room temp
- ⅔ cup granulated sugar
- 1 cup dark brown sugar
- 2 eggs
- 1 ½ teaspoon vanilla
- 3 cups flour
- 4 packages hot cocoa mix or ⅔ cup cocoa powder
- 1 teaspoon salt
- 1 teaspoon baking soda
- 2 teaspoon baking powder
- 1 cup chocolate chips
- 1 cup mini marshmallows dehydrated
In a standard mixer, cream butter and sugars until smooth.
Add in eggs and vanilla extract until fully combined.
In a separate bowl, mix together flour, baking soda, baking powder, and salt.
Add your dry ingredients to your wet ingredients in small amounts until just combined.
Fold in your chocolate chips and marshmallows evenly, then chill your dough for at least 30 minutes.
Preheat oven to 350ºF and prepare a baking sheet with parchment paper.
Using a cookie scoop for consistency, drop cookies about 2 inches apart on your sheet. you can flatten the tops slightly for a rounder, slightly thinner cookie.
Bake for about 9 minutes or until edges are lightly browned, and let cool slightly before serving.
