Fudgy Guinness Brownies
Ingredients
For the brownies:
- 8 oz semisweet chocolate chopped
- 5 tablespoon unsalted butter room temp
- ¾ cup all purpose flour
- ½ cup unsweetened cocoa powder sifted
- ¼ teaspoon kosher salt
- 1 cup granulated sugar
- 3 eggs room temp
- 2 teaspoon vanilla extract
- ¾ cup Irish stout beer
- 1 cup mini chocolate chips
For the frosting:
- ½ cup unsalted butter room temp
- 2½ cups powdered sugar sifted
- 2 teaspoon pure vanilla extract
- 4 tablespoon Irish stout
- 1 tablespoon milk optional
Instructions
For the brownies:
- Preheat your oven to 350ºF and prepare an 9x9in square pan with parchment paper.
- Melt your chocolate and butter over a double boiler until fully combined and smooth. Remove from heat and let cool slightly.
- In a large mixing bowl, combine flour, cocoa powder, and salt. Set aside.
- Once your chocolate mixture is cooled slightly, whisk in your sugar until combined. Then add your eggs and vanilla, mixing after each one to fully combine.
- Fold in your dry ingredients in small batches, then do the same with your Guinness until batter is smooth. Then, fold in the chocolate chips until just combined.
- Pour the batter into your prepared pan and bake for about 30 minutes, or until a toothpick comes out almost clean.
- Let the brownies cool completely before frosting.
For the frosting:
- In a standard mixer with the paddle attachment, mix the butter until fluffy. Add in the powdered sugar one cup at a time and mix until combined.
- Add the vanilla extract and Guinness until fully combined and smooth. If needed, add one tablespoon of milk at a time to make frosting thinner.
- Spread frosting evenly over your cooled brownies and cut with a sharp knife before serving!
