These white chocolate peanut butter cookies are the perfect combination of salty and sweet, fit for any occasion! They're made with a nutty peanut butter base, rich white chocolate chips, and dunked in more melted white chocolate.
I love a classic peanut butter cookie, but sometimes I crave a little extra flavor in there - who doesn’t? White chocolate and peanut butter are two of my favorite flavors ever (when I’m in the mood for sweets, at least) so it was a no-brainer to add these together. Fold some white chocolate chips into the peanut butter base, and then dip the cookies into even more chocolate to finish them off. The rich peanut butter base mixed with the sweet white chocolate makes for a super yummy treat - and a pretty easy one at that!

There are a few different ways you can customize this recipe:
- Add some extra toppings. Chop up some nuts or choose some festive sprinkles to add to the melted chocolate while it's still wet!
- Use your favorite chocolate. If white chocolate isn't your thing, you can use any type of melted chocolate to dip these peanut butter cookies into!

- Melt your chocolate using a double boiler. Heating up chocolate in the microwave can work in a pinch, but to ensure that your chocolate melts nicely and stays smooth enough to dip your cookies into, I recommend using a double boiler.

White Chocolate Peanut Butter Cookies
Ingredients
- ½ cup butter softened
- 1 cup peanut butter
- ½ cup granulated sugar
- ½ cup brown sugar
- 1 tablespoon milk
- 1 ¼ teaspoon vanilla extract
- 1 egg
- 1 ¼ cup flour
- ½ teaspoon baking soda
- ½ teaspoon baking powder
- ¼ teaspoon salt
- ¼ teaspoon cinnamon
- ½ cup white chocolate chips
- white chocolate melting wafers to dip
Instructions
- In a medium bowl, mix flour, baking soda, baking powder, salt and cinnamon.
- In the bowl of a stand mixer with a paddle attachment, cream the peanut butter and softened butter until smooth.
- Add white and brown sugars to butter mixture until combined.
- Beat egg, vanilla extract and milk into the mixture until just combined, no longer than one minute.
- Add dry ingredients to wet mixture in portions, mixing on low speed until combined. fold in white chocolate chips by hand until just combined.
- Chill dough for at least 30 minutes in a sealed container.
- Preheat your oven to 375ºF and prepare a baking sheet with parchment paper.
- Roll dough into small balls and place on the baking sheet, about 2 inches apart.
- Lightly press down on each ball to make a flattened circle.
- Bake for about 10 minutes, or just until cookies start to puff up. Let cookies cool completely before dipping.
- Melt your wafers over a double boiler or in the microwave. Dip cookies halfway into melted chocolate.
- Place cookies on a tray or plate and cool in the fridge before serving.
