Fudgy Guinness Brownies

These fudgy Guinness brownies will be a huge hit at your St. Patrick’s Day celebrations! Incredibly moist and fudgy brownies made with Guinness stout and extra chocolate chips are topped with smooth Guinness buttercream for the ultimate chocolatey, beer-infused dessert.

Ingredients

For the brownies:

  • 8 oz semisweet chocolate chopped
  • 5 tablespoon unsalted butter room temp
  • ¾ cup all purpose flour
  • ½ cup unsweetened cocoa powder sifted
  • ¼ teaspoon kosher salt
  • 1 cup granulated sugar
  • 3 eggs room temp
  • 2 teaspoon vanilla extract
  • ¾ cup Irish stout beer
  • 1 cup mini chocolate chips

For the frosting:

  • ½ cup unsalted butter room temp
  • cups powdered sugar sifted
  • 2 teaspoon pure vanilla extract
  • 4 tablespoon Irish stout
  • 1 tablespoon milk optional

Instructions

For the brownies:

  • Preheat your oven to 350ºF and prepare an 9x9in square pan with parchment paper.
  • Melt your chocolate and butter over a double boiler until fully combined and smooth. Remove from heat and let cool slightly.
  • In a large mixing bowl, combine flour, cocoa powder, and salt. Set aside.
  • Once your chocolate mixture is cooled slightly, whisk in your sugar until combined. Then add your eggs and vanilla, mixing after each one to fully combine.
  • Fold in your dry ingredients in small batches, then do the same with your Guinness until batter is smooth. Then, fold in the chocolate chips until just combined.
  • Pour the batter into your prepared pan and bake for about 30 minutes, or until a toothpick comes out almost clean.
  • Let the brownies cool completely before frosting.

For the frosting:

  • In a standard mixer with the paddle attachment, mix the butter until fluffy. Add in the powdered sugar one cup at a time and mix until combined.
  • Add the vanilla extract and Guinness until fully combined and smooth. If needed, add one tablespoon of milk at a time to make frosting thinner.
  • Spread frosting evenly over your cooled brownies and cut with a sharp knife before serving!

  • How to get clean slices: Run a sharp knife under hot water before cutting into your brownies, and keep cleaning the knife and running it under water between each slice for clean edges!
