Broccoli Cheddar Gnocchi Soup
Ingredients
- homemade gnocchi
- 4 tablespoon butter
- ½ cup minced onion
- ¼ cup minced carrot
- ¼ cup minced celery
- 2-3 cloves garlic minced
- 3 cups chicken broth
- 2 cups broccoli chopped
- 1 cup milk or cream
- 2½ cups shredded cheddar cheese
- 1 tablespoon garlic powder
- 1 teaspoon paprika
- 4-6 slices bacon cooked & chopped
- 1 teaspoon parsley flakes
- salt to taste
- ground pepper to taste
Instructions
- Add butter to a large pot over low heat and melt down. Add in onions, carrots, and celery and cook for 5-10 minutes, until fragrant but not browned. Season with salt and pepper to taste.
- Add in garlic and cook for another 1-2 minutes, then add broth and broccoli and let simmer on medium-low heat for about 10 minutes.
- Use an immersion blender to blend the vegetables to your desired consistency - either blend until fully smooth, or leave the soup thick with veggies.
- Add in the milk/cream, garlic powder, and paprika and stir well, then slowly stir in the shredded cheese until fully melted.
- Add the gnocchi and simmer for another 10 minutes, stirring occasionally until soup is thick.
- Stir in chopped bacon and parsley flakes before serving, saving some to garnish if desired.
