Broccoli Cheddar Gnocchi Soup

Warm up on a cold winter's day with this broccoli cheddar gnocchi soup! This creamy dish is made with a hearty base of veggies, flavorful chicken stock, and lots of rich cheddar cheese. Top it with crispy bacon and crunchy croutons and you've got the perfect cozy winter meal!

Ingredients

  • homemade gnocchi
  • 4 tablespoon butter
  • ½ cup minced onion
  • ¼ cup minced carrot
  • ¼ cup minced celery
  • 2-3 cloves garlic minced
  • 3 cups chicken broth
  • 2 cups broccoli chopped
  • 1 cup milk or cream
  • cups shredded cheddar cheese
  • 1 tablespoon garlic powder
  • 1 teaspoon paprika
  • 4-6 slices bacon cooked & chopped
  • 1 teaspoon parsley flakes
  • salt to taste
  • ground pepper to taste

Instructions

  • Add butter to a large pot over low heat and melt down. Add in onions, carrots, and celery and cook for 5-10 minutes, until fragrant but not browned. Season with salt and pepper to taste.
  • Add in garlic and cook for another 1-2 minutes, then add broth and broccoli and let simmer on medium-low heat for about 10 minutes.
  • Use an immersion blender to blend the vegetables to your desired consistency - either blend until fully smooth, or leave the soup thick with veggies.
  • Add in the milk/cream, garlic powder, and paprika and stir well, then slowly stir in the shredded cheese until fully melted.
  • Add the gnocchi and simmer for another 10 minutes, stirring occasionally until soup is thick.
  • Stir in chopped bacon and parsley flakes before serving, saving some to garnish if desired.

Notes

  • Spice it up. If you want some more heat to this soup, some cayenne or chili powder would be a great addition - or even some tabasco to top it off!
  • Switch up the dumplings. If you really want to make this an even more filling, hearty dish, swap the gnocchi for a delicious stuffed ravioli, or really any other type of dumpling!
  • Utilize mise en place! Make sure you have all of your ingredients prepped and ready before you begin making this recipe - it will help save you time and keep you organized.
  • Make it a meal. A big bowl of this soup is hearty enough on its own, but it's just as delicious in smaller portions paired with your favorite salad or sandwich!
