Mini Brie and Apple Galettes

These mini brie and apple galettes are a delicious sweet and savory treat to make this winter! Sweet sliced apples sit atop gooey, melted brie and a buttery, flaky crust, and a balsamic glaze gives these galettes a bright, tart finish.

Inspired by a delicious pizza I tried one autumn afternoon, these mini brie and apple galettes are the best combination of sweet and savory. The flavors are super simple, but complement each other perfectly: gooey, melty brie cheese, light and buttery pie crust, sweet apples, and a tangy balsamic glaze to round it all out. These mini galettes make the perfect individual snack, or you can make one large galette and slice it up to share, too!

  • Switch up the cheese. You’ll still want to use brie as your base, but try swapping the mozzarella with a sharp cheddar or a smoky shredded gouda for different flavor profiles.

Mini Brie and Apple Galettes

Ingredients

For the dough:

  • 1 ¼ cups flour
  • 1 ½ tbsp granulated sugar
  • ½ tsp salt
  • ½ cup unsalted butter cold cubed
  • 4 tbsp ice cold water
  • 1 egg for egg wash

For the toppings:

  • 2 apples thinly sliced
  • 8 oz brie sliced
  • ¼ cup shredded mozzarella cheese
  • 1 tbsp brown sugar
  • 1 tbsp balsamic glaze
  • 1 tsp chopped parsley or flakes

Instructions

For the dough:

  • Add the flour, sugar, and salt to a food processor. Add the butter a few cubes at a time, pulsing until combined after each handful.
  • When the butter is fully combined, add in your water 1 tablespoon at a time, pulsing until the dough forms into a rough ball.
  • Remove the dough from the food processor and move to a floured surface. Knead the dough slightly and form it into a disc. Wrap in plastic wrap or a sealed container and chill in the fridge for at least 30 minutes.

For assembly:

  • Preheat the oven to 350ºF and prepare a large baking sheet with parchment paper.
  • Divide the dough into four equal parts. Roll out each portion of dough on a floured surface until they form thin circles, then move them to the sheet pan.
  • Lay the brie slices down evenly between the four crusts in one flat layer, leaving a few inches around the border empty to fold over.
  • Sprinkle the mozzarella evenly over each layer of brie, then add your apple slices on top. Finish with a light sprinkling of brown sugar.
  • Fold the edges of the dough over the toppings to form a crust, creasing the dough every few inches. Whisk the egg with a few tablespoons of water, then brush the egg wash over the crust evenly.
  • Bake for 30 minutes, or until crust is baked through and edges are golden brown.
  • Drizzle with balsamic glaze and top with parsley before slicing and serving.
