Customize This Recipe!

There are a few different ways you can customize this recipe:

  • Add chocolate to the dough. If you want even more chocolate, add mini chocolate chips or very finely chopped chocolate to the peanut butter cookie dough before assembling and baking these cookies.
  • Drizzle something sweet on top. Adding a caramel or white chocolate drizzle would add even more sweet flavor to these cookies, plus an even more elevated look!

  • Utilize mise en place! Make sure you have all of your ingredients prepped and ready before you begin making this recipe – it will help save you time and keep you organized. 
  • Use thin peanut butter cups. For the perfect peanut butter to chocolate ratio, use a thin peanut butter cup–you won’t be adding too much peanut butter, and they can peek out over the top of the cookie without taking up too much of the inside. (You could use normal peanut butter cups, but you’ll just have to make the cookies a little bigger since they’ll need to cover a bigger chocolate cup.)

Ingredients

  • 1 cup peanut butter
  • ½ cup butter room temp
  • ¼ cup granulated sugar
  • ¾ cup dark brown sugar
  • 1 egg
  • ¼ cup almond milk
  • 1 ¼ tsp vanilla extract
  • 1 ½ cups flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 36 Reese’s Thins

Instructions

  • Preheat your oven to 375ºF and prepare a baking sheet with parchment paper.
  • In a standard mixer, cream together the peanut butter, butter, and sugars until smooth.
  • Mix in the egg, almond milk, and vanilla extract until combined.
  • In a separate bowl, mix the flour, baking powder and salt.
  • Add your dry mixture to the peanut butter mixture and beat until combined.
  • Using a cookie scoop for consistency, drop your cookies about 2 inches apart on your baking sheet.
  • Bake for 8-10 minutes, until slightly more golden and flattened.
  • After baking, use a hollow donut cutter that's slightly bigger than your cookies to keep the shape when placing the Reese's Thins on each cookie.*
  • Let cookies cool slightly, or chill them to harden the chocolate back up before serving!

Notes

*Place the cutter around each cookie so there’s a bit of space between the cookie’s edges and the cutter. Press the Reese’s cup onto the top of the cookie so it flattens out and engulfs the bottom edges of the chocolate. The cookies won’t spread too far because the donut cutters will make them hold their shape.
