Peanut Butter Cup Cookies

These peanut butter cup cookies are the perfect balance of chocolate and peanut butter! They have a soft peanut butter cookie base topped with a melty chocolate peanut butter cup – the sweetest indulgent little snack!

Ingredients

  • 1 cup peanut butter
  • ½ cup butter room temp
  • ¼ cup granulated sugar
  • ¾ cup dark brown sugar
  • 1 egg
  • ¼ cup almond milk
  • 1 ¼ teaspoon vanilla extract
  • 1 ½ cups flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 36 Reese's Thins

Instructions

  • Preheat your oven to 375ºF and prepare a baking sheet with parchment paper.
  • In a standard mixer, cream together the peanut butter, butter, and sugars until smooth.
  • Mix in the egg, almond milk, and vanilla extract until combined.
  • In a separate bowl, mix the flour, baking powder and salt.
  • Add your dry mixture to the peanut butter mixture and beat until combined.
  • Using a cookie scoop for consistency, drop your cookies about 2 inches apart on your baking sheet.
  • Bake for 8-10 minutes, until slightly more golden and flattened.
  • After baking, use a hollow donut cutter that's slightly bigger than your cookies to keep the shape when placing the Reese's Thins on each cookie.*
  • Let cookies cool slightly, or chill them to harden the chocolate back up before serving!

Notes

*Place the cutter around each cookie so there's a bit of space between the cookie's edges and the cutter. Press the Reese's cup onto the top of the cookie so it flattens out and engulfs the bottom edges of the chocolate. The cookies won't spread too far because the donut cutters will make them hold their shape.
