These garlic and herb roasted chickpeas are the best addition to your favorite salads, wraps, bowls, and more! They're coated with classic seasonings like garlic, oregano, parsley, cayenne, and more, then roasted to either chewy or crispy perfection.

Roasted chickpeas are a delicious and versatile recipe to have in your back pocket - they can be added to tons of dishes to make them better (and healthier), from protein bowls to salads and so much more. The seasonings are tame enough to be a safe, crowd-pleasing option, but still flavorful enough to want to make these again and again! I use the classics: garlic, onion, and cayenne powders, oregano, parsley, and red pepper flakes, and good old black pepper. Top them off with some flaky salt, roast them to any crispiness you want, and you're good to go!

Oven Roasted Garlic and Herb Chickpeas
Ingredients
- 1 can chickpeas 29 oz, drained
- ½ tablespoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon parsley flakes
- ½ teaspoon oregano
- ½ teaspoon ground cayenne
- ¼ teaspoon red pepper flakes
- ½ teaspoon black pepper
- 2 tablespoon olive oil
- kosher salt to taste
Instructions
- Preheat the oven to 400ºF and prepare a baking sheet with parchment paper or cooking spray.
- Drain and dry off the chickpeas and put them in a large mixing bowl.
- Add the oil and seasonings and mix together until combined.
- Spread the chickpeas onto the sheet evenly and roast for 20 minutes.
- Give the pan a shake to get an even roast on all sides, then put back into the oven for another 5-10 minutes, depending on how golden brown you want them.
- OPTIONAL: If you want your chickpeas super crispy, roast them for 35 minutes first, then add 5 minute increments to get them as crisp as you like.
- Sprinkle some more salt over the chickpeas before serving.
