Ingredients

  • 1 can chickpeas 29 oz, drained
  • ½ tablespoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon parsley flakes
  • ½ teaspoon oregano
  • ½ teaspoon ground cayenne
  • ¼ teaspoon red pepper flakes
  • ½ teaspoon black pepper
  • 2 tablespoon olive oil
  • kosher salt to taste

Instructions

  • Preheat the oven to 400ºF and prepare a baking sheet with parchment paper or cooking spray.
  • Drain and dry off the chickpeas and put them in a large mixing bowl.
  • Add the oil and seasonings and mix together until combined.
  • Spread the chickpeas onto the sheet evenly and roast for 20 minutes.
  • Give the pan a shake to get an even roast on all sides, then put back into the oven for another 5-10 minutes, depending on how golden brown you want them.
  • OPTIONAL: If you want your chickpeas super crispy, roast them for 35 minutes first, then add 5 minute increments to get them as crisp as you like.
  • Sprinkle some more salt over the chickpeas before serving.

Notes

  • Utilize mise en place! Make sure you have all of your ingredients prepped and ready before you begin making this recipe - it will help save you time and keep you organized.
  • Chewy vs. crispy: The beauty of this recipe is that you can roast the chickpeas to different levels of crispiness. If you like a chewier chickpea, 20-30 minutes in the oven is perfect. If you want a super crunchy, crispy chickpea, keep those babies in the oven for an additional 20 minutes and they’re good to go.
  • Add your own spices. The classics are classics for a reason, but if you want to experiment with some different spices and seasonings, this is definitely the recipe to do so.
  • Use them in a fun dish. I love adding these roasted chickpeas to salads, wraps, tacos, protein bowls, and more - wherever you want some extra crunch, these chickpeas are a great go-to!
