Homemade Gnocchi for Two

This homemade gnocchi for two is the perfect recipe for simple date night dinner! Easily made with just potatoes, flour, and oil, these little Italian delights come together in no time and pair with any sauce you're craving.

Ingredients

  • 4 small potatoes or 2 large
  • 1 egg beaten
  • 1 cup flour
  • pinch of salt

Instructions

  • Boil your potatoes in salted water for about 20 minutes or until they're fully tender.
  • Roughly mash potatoes and let them cool completely (it helps if you spread them out on a cutting board or on a floured surface).
  • Once potatoes are cooled, add them to a bowl and mix in the egg and most of the flour (about ¾ cup) until you get a rough dough. Knead dough and add in the remaining bit of flour until you get a smoother dough.
  • Shape the dough into a long rectangle and divide into strips. Roll each strip out a bit and cut into pieces about an inch thick (or a bit smaller if you'd like).
  • Boil the gnocchi until they rise to the surface of the water, about 5 minutes, then drain and serve in any sauce you enjoy.
