Chocolate Cherry Brownies

These fudgy chocolate cherry brownies are the definition of an indulgent summer dessert! With deep chocolate flavor and bursts of tart cherries under a blanket of sweet icing, these brownies are the perfect treat to satisfy your sweet tooth.

Ingredients

For the brownies:

  • 8 oz semisweet chocolate chopped
  • 5 tbsp unsalted butter room temp
  • ¾ cup all-purpose flour
  • ½ cup unsweetened cocoa powder sifted
  • ¼ tsp kosher salt
  • 1 cup granulated sugar
  • 3 eggs room temp
  • 2 tsp vanilla extract
  • ¾ cup milk
  • ½ cup chocolate chopped
  • ½ cup sliced cherries
  • ¼ cup sliced cherries for topping

For the icing:

  • ½ cup powdered sugar
  • 2 tsp milk

Instructions

  • Preheat your oven to 350ºF and prepare an 8x8in square pan with parchment paper.
  • Melt your chocolate and butter over a double boiler until fully combined and smooth. Remove from heat and let cool slightly.
  • In a large mixing bowl, combine flour, cocoa powder, and salt. Set aside.
  • Once your chocolate mixture is cooled slightly, whisk in your sugar until combined. Then add your eggs and vanilla, mixing after each one to fully combine.
  • Fold in your dry ingredients in small batches, then do the same with your milk until batter is smooth.
  • Then, fold in the chocolate and cherries until just combined.
  • Pour the batter into your prepared pan and sprinkle some more sliced cherries on top.
  • Bake the brownies for about 30 minutes, or until a toothpick comes out almost clean. Let them cool slightly.
  • Make the icing by mixing the milk and powdered sugar together, then drizzle it on top of the brownies. Slice and serve!

Notes

  • Utilize mise en place! Make sure you have all of your ingredients prepped and ready before you begin making this recipe - it will help save you time and keep you organized.
  • How to get clean slices: Run a sharp knife under hot water before cutting into your brownies, and keep cleaning the knife and running it under water between each slice for clean edges!
  • Swap for frosting. If you want a more substantial topping than icing, add some cherry compote to a basic frosting and spread it on top of your brownies instead!
  • Get nutty. If you like nuts, toasty walnuts or chopped hazelnuts would complement the sweet, tart flavors of these brownies perfectly!
