Maple Bacon Brussels Sprouts

These maple bacon brussels sprouts are the perfect side dish to complete any fall meal! Hearty roasted brussels sprouts are combined with crispy bacon, maple syrup, and parmesan cheese to create a delicious sweet and savory side or appetizer!

I love a simple roasted veggie, and these roasted brussels sprouts are one of my absolute favorites! Just slice, roast, and toss with toppings, and you’ve got a gorgeous sweet & savory snack – yes, I can (and do) eat a whole tray of this as a midday snack. The sweet maple bacon and syrup cuts into the savory sprouts so beautifully, especially topped with rich parmesan cheese and lots of salt and pepper! It’s the perfect fall dish, especially since you can add other yummy fall veggies like sweet potatoes, butternut squash, and more.

  • Baking sheet
  • Brussels sprouts
  • Bacon
  • Olive oil
  • Maple syrup
  • Garlic powder
  • Ground paprika
  • Salt
  • Pepper
  • Parmesan cheese

Customize This Recipe!

There are a few different ways you can customize this recipe:

  • Season to your liking. I tend to keep the seasonings pretty simple in this side dish, but feel free to use your favorite herbs and spices to make these brussels sprouts your own!
  • Get creative with toppings. I definitely suggest keeping the maple syrup for that sweet & savory balance, but you can enhance it even more with hot honey, tangy blue cheese crumbles, and more!

Ingredients

  • 2 cups fresh brussels sprouts
  • 2 tbsp olive oil
  • garlic powder to taste
  • ground paprika to taste
  • salt & pepper to taste
  • 4 oz maple bacon cooked
  • 2 tbsp maple syrup
  • cup shredded parmesan

Instructions

  • Preheat oven to 400ºF and prepare a baking sheet with tin foil and cooking spray.
  • Slice the brussels sprouts into thirds (smaller sprouts can be cut in half), and gently toss with olive oil and seasonings.
  • Spread evenly on baking sheet and bake for 15 minutes, then flip sprouts and bake for another 10-15 minutes until browned and crisp.
  • While roasting the brussels sprouts, cook and chop the bacon.
  • Toss cooked bacon and roasted brussels sprouts together with maple syrup, then transfer to serving tray or plates and top with shredded parmesan.
