This buffalo chicken and bacon grilled cheese is stacked with incredible flavor! Fried chicken smothered in buffalo sauce, crispy strips of bacon, and melty blue cheese crumbles come together to create a truly impressive sandwich that's the perfect hearty lunch option.
This grilled cheese was inspired by arguably the best grilled cheese I’ve ever had: the Buffalo Popcorn Lobster Grilled Cheese from The Highroller Lobster Co. in Portland, Maine. Yeah, it’s a mouthful of a name and of a sandwich. To keep this recipe on a realistic budget, lobster was out of the question, but you can't go wrong with fried chicken! Add tangy buffalo sauce, your favorite sliced cheeses, crispy bacon, and crumbly blue cheese, and you've got yourself a crazy delicious gourmet grilled cheese.

You’ll need the following ingredients and equipment to make this buffalo chicken and bacon grilled cheese:
- Bread
- Chicken
- Bacon
- Muenster cheese
- Mozzarella cheese
- Buffalo sauce
- Blue cheese
Customize This Recipe!
There are a few different ways you can customize this recipe:
- Use your favorite cheese. In terms of sliced cheeses, you can really use whatever type you want - just don't leave out the blue cheese crumbles!
- Bread is your friend. Don't skimp on the bread here - go for a crusty sourdough or a thick cut of any bakery loaf to get the best overall grilled cheese experience.

Buffalo Chicken and Bacon Grilled Cheese
Ingredients
- 4 thick slices of bread any type
- 4 chicken tenders or 2 chicken breasts, fried
- 4 strips of bacon cooked
- 4 slices mozzarella cheese
- 4 slices muenster cheese
- buffalo sauce
- blue cheese crumbles
Instructions
- Spray down a sauté pan and lightly butter one side of all bread slices.
- Toss your fried chicken in buffalo sauce, or simply add some onto the sandwich itself later (or do both)
- Heat up 2 slices of bread, butter-side down, over medium heat.
- Place 2 slices of mozzarella cheese on both pieces of bread and let them soften.
- Put some buffalo sauce on top of the mozzarella, then place your bacon strips evenly on top.
- Lay your chicken down next (you can either slice the chicken or keep it whole), add some more sauce and blue cheese crumbles, then lay your muenster cheese on top.
- Top both sandwiches with your remaining slices of bread and heat for a few more minutes. flip over your grilled cheeses when the bottom is golden brown.
- Keep flipping them over until both sides are browned and cheese is melted.
