- 8 inch cast iron skillet (or oven-safe pan)
- Saucepan

- Cocoa powder
- Light brown sugar

Marbled Brownie Skillet Cookie
Ingredients
For the cookie dough:
- 4 tablespoon butter
- ¾ cup flour
- ¼ teaspoon baking powder
- ⅛ teaspoon baking soda
- ½ teaspoon salt
- ⅓ cup light brown sugar
- ½ egg whisked and divided
- ½ teaspoon vanilla extract
- 2 oz chocolate chopped
For the brownie batter:
- 3 tablespoon butter
- ¼ cup flour
- 2½ tablespoon cocoa powder
- 1 dash chai spice mix optional
- pinch salt
- ⅓ cup light brown sugar
- ½ egg whisked and divided
- ½ teaspoon vanilla extract
Instructions
For the cookie dough:
- In a saucepan on medium heat, brown the butter until solids have formed and darkened to a deep brown. Pour into a heat safe bowl and let cool to room temperature before using.
- Mix the flour, baking powder, baking soda, and salt in a bowl and set aside.
- Add the brown sugar to the cooled browned butter. Whisk the egg and add half of it to the sugar mixture, then add vanilla extract and stir until combined.
- Mix in the dry ingredients until just combined, then fold in the chopped chocolate.
For the brownie batter:
- In a saucepan on medium heat, brown the butter until solids have formed and darkened to a deep brown. Pour into a heat safe bowl and let cool to room temperature before using.
- Mix the flour, cocoa powder, salt, and optional chai spices in a bowl and set aside.
- Add the brown sugar to the cooled browned butter. Whisk the egg and add half of it to the sugar mixture, then add vanilla extract and stir until combined.
- Mix in the dry ingredients until just combined, then fold in the chopped chocolate.
For assembly:
- Preheat the oven to 350ºF and lightly grease an 8in cast iron skillet with butter.
- Drop even scoops of cookie dough into the skillet, leaving spaces to fill with brownie batter.
- Press down the cookie dough gently to level out the spots, then pour the brownie batter into all the open spaces until the skillet is filled and level. Top with more chopped chocolate if desired.
- Bake for about 20 minutes, until cookie dough is golden and brownie batter has firmed (a toothpick should come out mostly clean - a little gooey is okay!).
- Top with your favorite ice cream and serve warm!
