Marbled Brownie Skillet Cookie

This marbled brownie skillet cookie for two is the perfect indulgent dessert to share this Valentine's Day! Dig into a gooey brownie and warm, soft cookie dough in every bite - and don't forget to top it off with your favorite ice cream!

Ingredients

For the cookie dough:

  • 4 tablespoon butter
  • ¾ cup flour
  • ¼ teaspoon baking powder
  • teaspoon baking soda
  • ½ teaspoon salt
  • cup light brown sugar
  • ½ egg whisked and divided
  • ½ teaspoon vanilla extract
  • 2 oz chocolate chopped

For the brownie batter:

  • 3 tablespoon butter
  • ¼ cup flour
  • tablespoon cocoa powder
  • 1 dash chai spice mix optional
  • pinch salt
  • cup light brown sugar
  • ½ egg whisked and divided
  • ½ teaspoon vanilla extract

Instructions

For the cookie dough:

  • In a saucepan on medium heat, brown the butter until solids have formed and darkened to a deep brown. Pour into a heat safe bowl and let cool to room temperature before using.
  • Mix the flour, baking powder, baking soda, and salt in a bowl and set aside.
  • Add the brown sugar to the cooled browned butter. Whisk the egg and add half of it to the sugar mixture, then add vanilla extract and stir until combined.
  • Mix in the dry ingredients until just combined, then fold in the chopped chocolate.

For the brownie batter:

  • In a saucepan on medium heat, brown the butter until solids have formed and darkened to a deep brown. Pour into a heat safe bowl and let cool to room temperature before using.
  • Mix the flour, cocoa powder, salt, and optional chai spices in a bowl and set aside.
  • Add the brown sugar to the cooled browned butter. Whisk the egg and add half of it to the sugar mixture, then add vanilla extract and stir until combined.
  • Mix in the dry ingredients until just combined, then fold in the chopped chocolate.

For assembly:

  • Preheat the oven to 350ºF and lightly grease an 8in cast iron skillet with butter.
  • Drop even scoops of cookie dough into the skillet, leaving spaces to fill with brownie batter.
  • Press down the cookie dough gently to level out the spots, then pour the brownie batter into all the open spaces until the skillet is filled and level. Top with more chopped chocolate if desired.
  • Bake for about 20 minutes, until cookie dough is golden and brownie batter has firmed (a toothpick should come out mostly clean - a little gooey is okay!).
  • Top with your favorite ice cream and serve warm!

Notes

  • Utilize mise en place! Make sure you have all of your ingredients prepped and ready before you begin making this recipe - it will help save you time and keep you organized.
  • Cast iron is king. Though technically you can use any oven-safe pan or dish to make this skillet cookie, using a cast iron pan will give you the best results, especially with even baking.
  • Add extra toppings. Get creative and use some funky toppings/mix-ins like other chocolates, candies, truffles, pretzels, marshmallows, even fruits - you name it, you can use it!
  • Choose a unique ice cream. The ice cream you pair with this skillet cookie can totally change the vibe. Salted caramel? Elegant and indulgent. Plain vanilla? A classic. I used a peanut butter cookie dough variation, which was very on-brand.
