Peanut Butter Banana Oat Bars
Ingredients
- 2 cups rolled oats
- 3 ripe bananas mashed
- ½ cup peanut butter
- 1 tbsp vanilla extract
- 1 tsp cinnamon
- ½ tsp nutmeg
- ½ cup chocolate chips
- 2 tbsp peanut butter optional for drizzle
Instructions
- Preheat the oven to 350ºF and prepare an 8x8in baking pan with parchment paper.
- In a large bowl, mix together the mashed banana, oats, peanut butter, chocolate chips, vanilla extract, cinnamon, and nutmeg until fully combined.
- Spread the mixture into the prepared baking pan, smoothing down the top evenly. Add additional chocolate chips if desired.
- Bake for 20 minutes, until slightly darkened in color. Let the bars cool for 5 minutes after baking.
- Melt 2 tablespoons of peanut butter to drizzle on top if desired, then cut and serve.
