Apple Butter Streusel Muffins
Ingredients
For the muffins:
- ½ cup butter room temp
- ¾ cup sugar
- 2 eggs
- 2 tablespoon oil
- 1 teaspoon vanilla extract
- 2 cups flour
- 2 teaspoon baking powder
- 1 tablespoon ground cinnamon
- 1 teaspoon ground cardamom
- 1 teaspoon salt
- ¼ cup milk
- ½ cup apple butter
For the apple butter:
- 2 tablespoon butter
- 1 tablespoon ground cinnamon
- 1 teaspoon ground nutmeg
- 2 apples peeled and sliced
- ¼ cup sugar
- 1 tablespoon light brown sugar
- 1 tbsp + 1 tsp cornstarch
- 2 tablespoon water
For the streusel topping:
- ¼ cup butter room temp
- ⅓ cup flour
- ⅓ cup light brown sugar
- ½ teaspoon cinnamon
Instructions
For the apple butter:
- In a medium saucepan, melt the butter, then stir in apples, spices, and sugars. Heat on medium-low until apples are soft and liquid is slightly thickened, about 25 minutes.
- Mix cornstarch and water in small bowl to make a slurry, then add to pan and stir in fully. Turn heat down to low and simmer for about another 15-20 minutes, or until apples get mushy and liquid is thick and jammy.
- Use an immersion blender to or food processor to blend the apple butter into a smooth consistency, or leave as-is. Let cool before using.
For the muffins:
- Preheat oven to 350ºF and prepare a large muffin tin with paper liners or parchment paper.
- Mix the flour, baking powder, and salt together in a small bowl and set aside.
- Cream the butter and sugar together in a large bowl until light and fluffy.
- Add the eggs one at a time and mix until fully incorporated, then add vanilla extract and apple butter and mix together.
- Mix in half the dry ingredients, then add the milk and stir fully. Fold in the remaining dry ingredients until just combined.
- Divide the batter evenly between the muffin tins, using a cookie scoop for consistency.
- In a separate bowl, combine the flour, butter, light brown sugar, and cinnamon to make the streusel topping. Sprinkle it evenly over the muffins.
- Bake for 35 minutes or until the tops are golden brown and a toothpick comes out clean. Let cool slightly before eating.
