White Chocolate Macadamia Nut Cookies

Ingredients

  • 1 cup butter room temp
  • ¾ cup brown sugar
  • ¼ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 ¼ cups all-purpose flour
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup white chocolate chips
  • 1 cup raw macadamia nuts chopped

Instructions

  • Preheat oven to 350ºF and prepare a baking sheet with parchment paper.
  • In a standard mixer, cream the butter and sugars until smooth.
  • Add in the eggs and vanilla extract and mix until combined.
  • In a separate bowl, mix the flour, baking soda, and salt.
  • Add the dry mixture to your wet ingredients, beating until just combined.
  • Add the white chocolate chips and chopped macadamia nuts, folding together until combined.
  • Using a cookie scoop for consistency, drop your cookies about 2 inches apart on your baking sheet. You can slightly flatten them out for a thinner, rounder cookie.
  • Bake for 9-10 minutes, until slightly golden.
  • Let cookies cool on the baking sheet so they carryover bake for another 5 minutes or so.
