Whipped Pumpkin and Feta Dip
This whipped pumpkin and feta dip is a quick and easy recipe for any autumn get-together! Sweet pumpkin puree is blended with tangy feta and lots of savory additions to make a simple and stunning appetizer, side, or snack.

- 1 cup pumpkin puree
- 8 oz feta
- ¼ cup cottage cheese
- 3 tbsp olive oil
- ½ shallot chopped
- 1-2 cloves garlic chopped
- 2 tsp salt
- 2 tsp pepper
- 1 tsp parsley
Add all ingredients to a food processor and blend until smooth. You can add more olive oil to thin out the dip if desired.
Transfer the dip to a serving bowl, garnish with any additional seasonings or an extra drizzle of oil, then serve and enjoy!
