Potato Galette with Gruyere and Onions

This potato galette with gruyere and onions is the perfect warm & cozy meal on a chilly day! Soft potatoes and silky caramelized onions mesh with toasty bites of gruyere inside a crisp, flaky crust to bring you the ultimate comfort food.

Ingredients

  • 1 Pillsbury pie crust
  • 2 cups sliced potatoes
  • 1 cup gruyere cheese shredded or chopped
  • ½ onion caramelized
  • sprinkle of herbs parsley, oregano, etc

Instructions

  • Preheat oven to 400ºF and prepare a baking sheet with parchment paper.
  • Caramelize your onions - cook over low-medium heat in 1-2 tbsp of oil for about 45 minutes until dark brown and soft.
  • Lay Pillsbury pie crust out on the pan.
  • Mix potatoes and cheese in a bowl, then add in a pinch salt and pepper to season.
  • Once onions are finished, add into the potato mixture along with your herbs.
  • Spread mixture over the pie crust, leaving about 2 inches around the edges. fold the crust up over the mixture to make a ring.
  • Brush milk over the edge of the crust to help with color when baking.
  • Bake for 45 minutes, or until crust is golden brown and potatoes are tender.
  • Sprinkle with any more seasonings you’d like and serve warm!
