No Bake Chocolate Chip Cookie Dough Bars

Ingredients

For the cookie dough:

  • ½ cup unsalted butter room temp
  • 1 ¼ cups all-purpose flour heat treated (see instructions)
  • ½ cup brown sugar
  • ¼ cup granulated sugar
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • ½ cup chocolate chopped

For the ganache:

  • 8 oz semi-sweet chocolate chopped
  • cup heavy cream
  • 1 teaspoon vanilla extract
  • flaky salt for topping

Instructions

For the cookie dough:

  • Heat treat your flour in a microwave-safe bowl for 1 minute and 30 seconds, stirring in intervals of 15-30 seconds.
  • In the bowl of a stand mixer with the paddle attachment, cream the butter and sugars together until fluffy. Add the vanilla and mix until combined.
  • Mix in the flour until combined. Add milk one tablespoon at a time until the cookie dough is smooth.
  • Prepare an 8x8in square pan with parchment paper. Press the cookie dough into the pan in a flat layer that reaches all sides of the pan. Chill the cookie dough in the fridge for about 1 hour to firm up.

For the ganache:

  • In a microwave-safe bowl, heat the milk and chocolate in 15 second intervals, stirring well after each. Only heat until the chocolate has just melted and the mixture is smooth. Mix in the vanilla extract.
  • Let the ganache cool slightly, then pour the ganache over the cookie dough in the pan and spread it out into an even layer. Sprinkle a bit of salt on top so it sets into the chocolate.
  • Place the pan back in the fridge for another 2 hours or overnight for the ganache to set. The ganache will still be soft, but no longer runny after chilling.
  • Sprinkle some more salt on top of the ganache, then slice into bars and enjoy!
