Mini Gingerbread Loaf

This mini gingerbread loaf is a classic holiday treat! It’s super moist and flavorful, with Christmas spices like ginger, cinnamon, nutmeg, and allspice and a sweet maple cream cheese frosting on top.

Ingredients

  • 2 cups flour
  • 1 cup sugar
  • 2 teaspoon baking powder
  • 1 ½ teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1 teaspoon allspice
  • ½ teaspoon baking soda
  • ½ teaspoon ground ginger
  • 1 egg
  • 1 cup almond milk
  • ½ cup maple syrup
  • 1 tablespoon vegetable oil

Instructions

  • Prepare an 8x4" loaf pan and preheat your oven to 325ºF.
  • In a medium bowl, mix together all dry ingredients until fully combined.
  • In a separate bowl, mix wet ingredients until fully combined.
  • Fold the wet ingredients into the dry ingredients until fully mixed.
  • Pour batter into your prepared pan and bake for about 50-60 minutes, or until a toothpick comes out clean.
  • Top with a frosting or icing of your choosing and enjoy!
