Mediterranean Burrata Board
This mediterranean burrata board is a quick & delicious snack board to pair with your favorite bread, chips, or veggies! This plate is piled high with bright flavors inspired by mediterranean cuisine, featuring creamy burrata, rich roasted eggplant, juicy sun-dried tomatoes, tangy Kalamata olives, and more.

- 2 balls burrata (2 large or 4 small)
- 2-3 tablespoon pesto
- 1 small eggplant cubed and roasted
- ¼ cup sundried tomatoes chopped
- ¼ cup kalamata olives chopped
- ¼ cup cucumbers chopped
- 1-2 sprigs dill chopped
- 1-2 teaspoon oregano flakes or freshly chopped
- salt and pepper to taste
- 1 tablespoon olive oil
- bread or pita chips for dipping
For the eggplant:
Preheat oven to 450ºF and prepare a baking sheet with parchment paper.
Cut 1 small eggplant into large cubes, then toss in 1 tablespoon olive oil and a pinch of salt and pepper.
Spread the eggplant onto the baking sheet and bake for about 20 minutes, then flip the eggplant and bake for another 10-15 minutes, until edges are golden brown.
Optional: Mash the eggplant slightly before putting it on the burrata board.
For the board:
Let burrata come to room temperature, then mash and spread it onto a serving board or dish.
Spoon the pesto evenly across the top of the burrata, then scatter the eggplant, sun-dried tomatoes, olives, and cucumbers over the board.
Sprinkle the dill, oregano, salt, and pepper over the burrata, then drizzle with olive oil before serving warm with toasted bread or pita chips.

- Room temp is best. Be sure to let your burrata come to room temperature so it spreads easily onto your serving board - it will taste better with the other warm or room temp ingredients, too!
