Ingredients

For the blondies:

  • ½ cup light brown sugar
  • ½ cup dark brown sugar
  • ½ cup butter melted
  • 1 egg
  • 1 ½ teaspoon vanilla extract
  • 1 ¼ teaspoon cinnamon
  • ½ teaspoon salt
  • ½ cup apple butter
  • 1 cup flour
  • ¼ cup chopped walnuts optional

For the glaze:

  • ½ cup maple syrup
  • ¼ cup softened butter
  • 2 tablespoon milk
  • 1 ½ cups powdered sugar

Instructions

For the blondies:

  • Preheat oven to 350ºF and prepare an 8x8in baking pan (9x9in works too, but blondies will be thinner).
  • In the bowl of a stand mixer with the paddle attachment, cream together the sugars and butter until combined.
  • Mix in the egg, vanilla, salt and cinnamon until smooth.
  • Using a spatula, fold in the chopped apples and apple butter, mixing until just combined.
  • Fold in the flour, making sure not to over-mix.
  • Bake for about 30-35 minutes, until a toothpick or knife comes out clean.

For the glaze:

  • Heat the syrup over the stove on low heat until simmering to reduce it slightly, about 5-10 minutes.
  • Take syrup off heat and mix with butter to combine fully. Add sugar and mix until smooth, adding milk by the tablespoon when thinning is needed.
  • Pour the glaze over the cooled blondies and let it set slightly. I like to let mine set in the fridge, though you can leave them on the counter as well.
  • Cut into squares and serve!
