For the blondies:
- ½ cup light brown sugar
- ½ cup dark brown sugar
- ½ cup butter melted
- 1 egg
- 1 ½ teaspoon vanilla extract
- 1 ¼ teaspoon cinnamon
- ½ teaspoon salt
- ½ cup apple butter
- 1 cup flour
- ¼ cup chopped walnuts optional
For the glaze:
- ½ cup maple syrup
- ¼ cup softened butter
- 2 tablespoon milk
- 1 ½ cups powdered sugar
For the blondies:
Preheat oven to 350ºF and prepare an 8x8in baking pan (9x9in works too, but blondies will be thinner).
In the bowl of a stand mixer with the paddle attachment, cream together the sugars and butter until combined.
Mix in the egg, vanilla, salt and cinnamon until smooth.
Using a spatula, fold in the chopped apples and apple butter, mixing until just combined.
Fold in the flour, making sure not to over-mix.
Bake for about 30-35 minutes, until a toothpick or knife comes out clean.
For the glaze:
Heat the syrup over the stove on low heat until simmering to reduce it slightly, about 5-10 minutes.
Take syrup off heat and mix with butter to combine fully. Add sugar and mix until smooth, adding milk by the tablespoon when thinning is needed.
Pour the glaze over the cooled blondies and let it set slightly. I like to let mine set in the fridge, though you can leave them on the counter as well.
Cut into squares and serve!
