Loaded Baked Potato Ravioli

This loaded baked potato ravioli is exactly what it sounds like – all the best parts of a loaded baked potato stuffed inside homemade ravioli. It’s a super yummy mashed potato filling mixed with shredded cheese, lots of seasonings and, of course, chopped bacon!

Ingredients

For the dough:

  • homemade pasta dough

For the filling:

  • 1 large potato cooked and mashed
  • 1-2 tablespoon butter
  • 2 tablespoon milk
  • ¼ cup shredded cheese any kind
  • cup chopped bacon or bacon bits
  • 1 teaspoon parsley flakes
  • 1 teaspoon oregano
  • salt and pepper to taste

Instructions

For the filling:

  • To cook your potatoes: peel, chop, and boil on the stovetop until fully tender. then mash the potatoes until fully smooth, adding butter and milk to soften.
  • Mix together mashed potatoes, cheese, bacon, and seasonings until fully combined.

For the dough:

  • Roll out your dough by hand or through a pasta roller until you have thin, rectangular sheets.
  • Put a sheet of pasta dough into a ravioli mold* and scoop a small portion of filling into each square. Place another sheet of dough on top and seal together with a rolling pin. Cut out your ravioli with a pastry roller or a knife.

To cook the ravioli:

  • Boil the ravioli for around 2-4 minutes - don’t boil them too long, or they’ll explode!
  • Top with a sauce of your choice and enjoy!

Notes

*You can still make these without a mold - just lay one dough sheet flat and lightly indent with a pastry cutter/roller the squares you plan to cut. put a small scoop of filling in the center of each square, and then lay your second dough sheet on top of the filled layer. press down around the edges of each square to marry the dough sheets together, and then cut out the squares using a pastry roller or knife.
