For the filling:
- 1 sweet potato baked and mashed
- 1 tbsp brown sugar
- ⅛ cup parmesan cheese
- 1 tbsp nutmeg
- salt and pepper to taste
- red pepper flakes optional
To cook the sweet potato:
To assemble the ravioli:
To fill the ravioli, you’ll want two dough sheets of the same size - using a small donut cutter, cut out as many circles in each dough sheet as you can.
Place a small spoonful of filling on half the number of dough circles, then place another circle on top, pressing the edges down firmly with your fingers.
Take a fork and make imprints along the edges to further seal and add a bit of texture.
To cook the ravioli:
Boil around 2-4 minutes, or longer depending on how soft you like your ravioli - just don’t boil them too long, or they’ll explode!
Top with a sauce of your choice and enjoy!
