Peel and chop your sweet potatoes into large chunks and boil for about 20 minutes, until soft.
Mash the potatoes and add in salt, pepper, and oil until fully combined.
Mix in flour with a wooden spoon or your hands and knead until a dough forms. add in more flour by small handfuls if the dough is a little too sticky.
Divide dough into 2-4 parts.
Cover your surface area in flour and roll out each section of the dough into a long rope.
Cut the dough into rough 1-inch pieces, rolling along a fork if you want some texture to them.
Boil in water until gnocchi rises to the top of the pot, just a few minutes.
Heat up your choice of sauce in a pan while you drain your gnocchi, then add the gnocchi to your sauce pan + coat evenly.
