Homemade Sweet Potato Gnocchi

This sweet potato gnocchi is another warm and cozy recipe for fall that pairs well with any cream-based sauce! Think nutty fall spices with a hint of sweetness to round out a perfect autumn dish.

Ingredients

  • 2 medium sweet potatoes
  • 2 ½ teaspoon salt
  • 2 ½ teaspoon ground black pepper
  • 1 tablespoon olive oil
  • 2 ¼ cups flour

Instructions

  • Peel and chop your sweet potatoes into large chunks and boil for about 20 minutes, until soft.
  • Mash the potatoes and add in salt, pepper, and oil until fully combined.
  • Mix in flour with a wooden spoon or your hands and knead until a dough forms. add in more flour by small handfuls if the dough is a little too sticky.
  • Divide dough into 2-4 parts.
  • Cover your surface area in flour and roll out each section of the dough into a long rope.
  • Cut the dough into rough 1-inch pieces, rolling along a fork if you want some texture to them.
  • Boil in water until gnocchi rises to the top of the pot, just a few minutes.
  • Heat up your choice of sauce in a pan while you drain your gnocchi, then add the gnocchi to your sauce pan + coat evenly.
