Feta, Spinach, and Marsala Pasta (TikTok Pasta with a Twist)

Ingredients

  • 8 oz feta cheese 1 block
  • 2 pints cherry tomatoes
  • 2 tablespoon minced garlic
  • ¼ cup olive oil
  • 1 cup baby spinach
  • ¼ cup marsala wine
  • 4 cups rigatoni pasta
  • ground cayenne pepper to taste
  • red pepper flakes to taste
  • salt and pepper to taste

Instructions

  • Preheat your oven to 400ºF.
  • Put tomatoes in a shallow baking dish and place block of feta in the middle.
  • Sprinkle salt and pepper, garlic, red pepper flakes and olive oil over the dish and mix until tomatoes are evenly coated.
  • Bake for 40-45 minutes until tomatoes have burst and feta is golden on top.
  • While baking, cook your pasta to your liking and toss with a bit of olive oil to keep from sticking together.
  • After baking, stir feta into tomatoes immediately, adding your cayenne, marsala, and spinach until fully combined and smooth.
  • Add your pasta and stir again until coated evenly.
