Feta, Spinach, and Marsala Pasta (TikTok Pasta with a Twist)

- 8 oz feta cheese 1 block
- 2 pints cherry tomatoes
- 2 tablespoon minced garlic
- ¼ cup olive oil
- 1 cup baby spinach
- ¼ cup marsala wine
- 4 cups rigatoni pasta
- ground cayenne pepper to taste
- red pepper flakes to taste
- salt and pepper to taste
Preheat your oven to 400ºF.
Put tomatoes in a shallow baking dish and place block of feta in the middle.
Sprinkle salt and pepper, garlic, red pepper flakes and olive oil over the dish and mix until tomatoes are evenly coated.
Bake for 40-45 minutes until tomatoes have burst and feta is golden on top.
While baking, cook your pasta to your liking and toss with a bit of olive oil to keep from sticking together.
After baking, stir feta into tomatoes immediately, adding your cayenne, marsala, and spinach until fully combined and smooth.
Add your pasta and stir again until coated evenly.
