Creamy Tortellini Soup with Sausage

- 1 tbsp olive oil
- ½ lb sausage
- 1 tsp salt
- 1 tsp pepper
- 1 tsp garlic powder
- 1 tsp parsley
- 1 tsp oregano
- 1 small shallot minced
- 1 tbsp tomato paste optional
- 3 cups broth chicken or vegetable
- 1 cup heavy cream
- 1 cup mixed veggies
- 8 oz tortellini
- ½ cup grated parmesan
Add olive oil and sausage to a large saucepan on medium-low heat, adding in salt, pepper, garlic powder, parsley, and oregano and stirring to mix fully.
Add the chopped shallot and stir into the sausage until fully cooked.
Stir in the tomato paste fully, then add the broth, heavy cream, and mixed vegetables, cooking over medium heat for about 10 minutes or until slightly thickened.
Add in the tortellini and cook for another 3-5 minutes until tender.
Remove the saucepan from heat and stir in the parmesan cheese until melted and fully incorporated into the soup.
Transfer to serving bowls and garnish with extra cheese or herbs if desired.
