Creamy Avocado Basil Pasta

This gorgeous avocado basil pasta is such a quick and easy homemade meal! It's made with avocado, spinach, and basil for an easy way to get some healthy greens while still enjoying a delicious bowl of pasta.

Ingredients

  • 1 ¾ cup pasta
  • 1 cup spinach
  • 1 avocado
  • 3 cloves garlic
  • 1 teaspoon oregano
  • 1 teaspoon parsley
  • cup pasta water
  • ½ cup milk
  • cup parmesan
  • salt to taste
  • pepper to taste

Instructions

  • In a pot on the stove, boil the pasta according to package instructions (usually 10 minutes).
  • While the pasta is boiling, add the avocado, spinach, basil, garlic, milk, parmesan, and seasonings to the blender and blend until smooth.
  • Add in ⅓ cup of pasta water and blend. You can add more water or milk as needed to thin the sauce.
  • Drain the pasta and add the pasta and the sauce back into the pot, stirring to coat evenly.
  • Transfer pasta to a serving bowl, top with more parmesan, and enjoy!

Notes

  • Utilize mise en place! Make sure you have all of your ingredients prepped and ready before you begin making this recipe - it will help save you time and keep you organized.
  • Save that pasta water. Make sure you save about a cup of pasta water before draining your noodles! The recipe calls for ⅓ cup, but it's best to have some extra pasta water on hand in case you want your sauce any thinner.
