Ingredients

  • 1 puff pastry sheet room temp
  • ½ cup grape tomatoes
  • 1 tbsp olive oil
  • 1 mini ball burrata optional

For the goat cheese filling:

  • 3-4 oz goat cheese room temp
  • ½ tsp garlic powder
  • ½ tsp rosemary
  • ½ tsp parsley flakes
  • ¼ tsp pepper
  • ¼ tsp salt

Instructions

  • Lay out puff pastry sheet to thaw if frozen, then cut into four even sections.
  • Preheat the oven to 400ºF and prepare a baking sheet with parchment paper.
  • In a small bowl or using a stand mixer, whip the goat cheese, garlic powder, rosemary, parsley, salt, and pepper together until smooth.
  • Spread the goat cheese filling onto each pastry square, leaving a small border around the edges.
  • Add the tomatoes on top of the goat cheese and bake for about 20 minutes, or until the edges have risen and become golden.
  • Brush the pastry edges with olive oil after baking, then sprinkle any extra herbs on top.
  • Optional: spoon burrata evenly over each pastry before serving.

Notes

  • Utilize mise en place! Make sure you have all of your ingredients prepped and ready before you begin making this recipe - it will help save you time and keep you organized.
  • Don't skip the oil. Brushing the edges of each pastry with a bit of olive oil after baking helps the herbs stick and gives the flaky dough some moisture!
  • Use an extra drizzle. You can add a tangy drizzle like balsamic glaze, or a hot honey drizzle depending on your desired flavor.
  • Add some heat. Small additions like red pepper flakes or cayenne powder in the goat cheese mixture can take the spice level up a notch!
