- 1 puff pastry sheet room temp
- ½ cup grape tomatoes
- 1 tbsp olive oil
- 1 mini ball burrata optional
For the goat cheese filling:
- 3-4 oz goat cheese room temp
- ½ tsp garlic powder
- ½ tsp rosemary
- ½ tsp parsley flakes
- ¼ tsp pepper
- ¼ tsp salt
Lay out puff pastry sheet to thaw if frozen, then cut into four even sections.
Preheat the oven to 400ºF and prepare a baking sheet with parchment paper.
In a small bowl or using a stand mixer, whip the goat cheese, garlic powder, rosemary, parsley, salt, and pepper together until smooth.
Spread the goat cheese filling onto each pastry square, leaving a small border around the edges.
Add the tomatoes on top of the goat cheese and bake for about 20 minutes, or until the edges have risen and become golden.
Brush the pastry edges with olive oil after baking, then sprinkle any extra herbs on top.
Optional: spoon burrata evenly over each pastry before serving.
