Ingredients

For the apple filling:

  • 2-3 small apples chopped (peeling optional)
  • 2 tbsp granulated sugar
  • 2 tbsp brown sugar
  • ½ tsp cinnamon
  • ¼ tsp nutmeg

For the crisp topping:

  • ¼ cup rolled oats
  • ¼ cup all-purpose flour
  • 3 tbsp brown sugar
  • 3 tbsp butter cold, cubed

Instructions

  • Preheat the oven to 350ºF and set your cocottes/ramekins on a baking sheet.
  • In a medium bowl, mix the chopped apples with both sugars, cinnamon, and nutmeg.
  • In a small bowl, mix the oats, flour, and brown sugar together until combined. Mix in the cold butter with your hands until soft and crumbly in texture.
  • Divide the apple mixture into both cocottes, then top each with an even layer of the oat mixture.
  • Bake for about 25-30 minutes, or until the crisp topping is sturdy and golden brown.
  • Let cool for about 5 minutes, then serve.

Notes

  • Utilize mise en place! Make sure you have all of your ingredients prepped and ready before you begin making this recipe - it will help save you time and keep you organized.
  • To peel or not to peel. It's really up to you! If you're not a fan of leaving the skin on your apples, peel them–but it's not necessary for the recipe (I personally like leaving the skin on).
  • Add more spices. Cinnamon and nutmeg are my go-to's for a perfectly balanced, cozy autumn flavor, but feel free to get creative with other fall spices like cloves, cardamom, etc.!
  • Finish with syrup. A bit of pure maple syrup on top of this apple crisp would be the perfect addition for a little extra sweetness!
  • Serve with ice cream. Scoop some vanilla bean right on top and enjoy all the melty goodness.
