For the apple filling:
- 2-3 small apples chopped (peeling optional)
- 2 tbsp granulated sugar
- 2 tbsp brown sugar
- ½ tsp cinnamon
- ¼ tsp nutmeg
For the crisp topping:
- ¼ cup rolled oats
- ¼ cup all-purpose flour
- 3 tbsp brown sugar
- 3 tbsp butter cold, cubed
Preheat the oven to 350ºF and set your cocottes/ramekins on a baking sheet.
In a medium bowl, mix the chopped apples with both sugars, cinnamon, and nutmeg.
In a small bowl, mix the oats, flour, and brown sugar together until combined. Mix in the cold butter with your hands until soft and crumbly in texture.
Divide the apple mixture into both cocottes, then top each with an even layer of the oat mixture.
Bake for about 25-30 minutes, or until the crisp topping is sturdy and golden brown.
Let cool for about 5 minutes, then serve.
- Utilize mise en place! Make sure you have all of your ingredients prepped and ready before you begin making this recipe - it will help save you time and keep you organized.
- To peel or not to peel. It's really up to you! If you're not a fan of leaving the skin on your apples, peel them–but it's not necessary for the recipe (I personally like leaving the skin on).
- Add more spices. Cinnamon and nutmeg are my go-to's for a perfectly balanced, cozy autumn flavor, but feel free to get creative with other fall spices like cloves, cardamom, etc.!
- Finish with syrup. A bit of pure maple syrup on top of this apple crisp would be the perfect addition for a little extra sweetness!
- Serve with ice cream. Scoop some vanilla bean right on top and enjoy all the melty goodness.
